Without a doubt, this is one of the most creative restaurants in town. The showpiece is the 11-course tasting menu, with ingredients selected according to a farmers almanac from 1666. The result is dishes such as "The Swell of the Sea" (langoustine on rice bread with dill and ginger) and "The Cooling Shade" (duck liver with white-peach lemonade and toasted seeds). The elegant, neutral-toned dining room oozes class and style; the refreshingly friendly, impressively knowledgable staff add a pleasant down-to-earth touch to the sky-high prices. This is haute cuisine at its very best—but note that there is a huge difference between lunch and dinner prices: the latter starts around SKr 895.
