If you can nab a seat in this small, unremarkable dining room (be sure to call ahead), you'll be rewarded with food prepared with such attention to detail that it will restore your faith in humanity. Since the chef is from southwest France, foie gras makes several appearances on the chalkboard menu, as does a delicious cassoulet, but you can also find freshly caught fish and perhaps farmer's pork straight from Gascony, a rarity in Paris.
