    Sprawling over three floors in a lovely old house in the heart of Varna, this elegant restaurant with stone and wood décor much in evidence serves up some of the tastiest food in the city. There's also a pretty terrace for al fresco dining in summer. Stylish and delicious dishes such as guinea fowl fillet with warm tabouleh and veal jus are international in character but also display Bulgarian hints. As the name implies, there is also an extensive and well chosen wine list, and the helpful staff will advise on what suits your chosen meal best.

    This very chic and hip restaurant doubles as a club in the evening, but the mood is slightly more restrained during mealtimes. The interior boasts bright, modern designs, and there is also a garden for summer dining. The good value food leans towards Italian with plenty of pasta dishes on offer, but other meat and fish mains are more pan-European in style, such as grilled sea bass or duck breast with balsamic sauce.

    The 'Swan' restaurant is about 8 miles (around 20 minutes by taxi) southeast of central Sofia, but its setting alone—beside the shores of Pancharevo Lake—makes the effort of getting here worthwhile. The ambiance is simply breathtaking and the elegant interior, with its latticework screens and occasional Buddha statuary, is designed to evoke images of Japan and the Far East. That's more for the feng shui aspect, however, as the excellent food (both in taste and value) is more European in style, with a long list of great fish and meat dishes as well as several salad options. You can also dine in the garden during the summer.

    Book ahead for a window seat or on one of the terraces for views of the river and the surrounding cityscape. The shopska salad, a traditional Bulgarian dish of diced tomatoes, cucumbers, peppers, onions, parsley, and sirene (a white brine cheese) is a nice light way to start off the meal. The menu is pan-European, featuring dishes like seafood risotto, lamb with mint sauce and yogurt, and several toothsome pizzas. If this restaurant is full, there's a second outpost at Ul.
