Latke Time - Happy Chanukah

Candles lit, latkes frying, familiar 'comfort' smells, and presents waiting for ME to unwrap. To all of you who are celebrating the Festival of Lights - Happy Chanukah.

Happy Chanukah!

Latkes are potato pancakes - absolutely delicious!

It's shredded potatoes mixed with chopped onion, pepper, salt, a little flour and egg to bind it together. Heat a pan with some oil, and make little "pancakes" and fry until golden brown on each side.

I make them a couple of times a year along with homemade applesauce.

Hag Chanukah Sameyah!

CD - a latke is a potato pancake.

To experience the miracle of Chanukah you eat 1 latke, and then it burns 8 days.

Any public events where you live? In San Francisco the main event is the Bill Graham's Menora in the Union Square. The main celebration is this Sunday December 12 3:30pm-6pm.

Thanks Seetheworld and FainaAgain. I make latkes and didn't even know it!! Except I use left-over mashed potatoes. Other than that the recipe is the same and truly wonderful!!!

Happy Hannukah, everyone! May the holiday season bring good things to all.

Love and Peace,
Debbie

Does anyone have a sweet potato latke recipe? And Dick--is your mom's recipe the standard latke one? I'm in the mood to make something different this year.

Happy Chanukah! We celebrate Chanukah and Xmas (mixed religions in the family) so I've spent the afternoon trying to keep my son away from the glass xmas tree ornaments and my daughter away from the Chanukah candles!! Oy vey!!!

OWJ, this is a recipe from Gourmet Magazine. I have yet to try it but it sure sounds good (and different). Happy Chanukah!

1 pound sweet potatoes, peeled and coarsely grated
2 scallions, finely chopped
1/2 cup plus 2 teaspoons all-purpose flour
2 large eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
Vegetable oil

Stir together potatoes, scallions, flour, eggs, salt, and pepper.
Heat a film of oil in a deep 12-inch non-stick skillet over moderately high heat until hot but not smoking. Working in batches of 4, spoon 1/8 cup potato mixture per latke into the oil and flatten to 3-inch diameter with a slotted spatula. Reduce heat to moderate and cook until golden, about 1 1/2 minutes on each side. Transfer latkes with spatula to paper towels to drain.

There is also a "sweet" version with vanilla and brown sugar. Let me know if you are interested.

Faina, I thought it was "Eat 1 latke, and it stays on your hips for 8 days."

Sweet potato latkes? Unconventional, but very yummy sounding!

Happy Chanukah to all!

Marilyn, speaking of my heaps, it's definitely so

OWJ, search the web (Google) for "chanukah recipes" or check out Aish.com Chanukah section, you'll find plenty of latke recipes for different vegetables.

Has anyone had the latkes at Nate and Al's deli in Beverly Hills? A few years ago, my husband and I discovered it while visiting, and they were oh so good. Even my husband, the goy, couldn't get enough!
